The future of Mali Ston’s famous oysters

Croatia’s Mali Ston Bay is home to some of the world’s tastiest oysters. They’re a favourite food of the FT’s Valerie Hopkins, who gets to shuck and eat the molluscs straight from the water in the bay. But locals are worried that ongoing construction in the area could damage the oysters’ delicate ecosystem, and an industry that dates back to Roman times.
